Roast Turkey and Cranberry Stuffed Sweet Potatoes


Ingredients

4 medium sweet potatoes

1 ½ cups cooked roast turkey, shredded

½ cup cranberry sauce

¼ cup chopped pecans (optional)

¼ cup cream cheese, softened

2 tbsp butter

1 tsp ground cinnamon

½ tsp ground nutmeg

Salt and pepper to taste

Fresh parsley, for garnish

Instructions

Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). Pierce the 

sweet potatoes with a fork, place them on a baking sheet, and roast for 45-50 

minutes, or until tender. Let them cool slightly.

Make the Filling: In a large mixing bowl, combine the shredded roast turkey, 

cranberry sauce, cream cheese, butter, cinnamon, nutmeg, salt, and pepper. Stir 

until well blended.

Stuff the Sweet Potatoes: Slice the sweet potatoes in half lengthwise and scoop out 

some of the flesh. Add the sweet potato flesh to the turkey mixture and combine. 

Spoon the filling back into the sweet potato skins.

Bake Again: Place the stuffed sweet potatoes back in the oven and bake for 10-12 

minutes until heated through.

Serve: Garnish with chopped pecans (if using) and fresh parsley. Serve hot!
