Ingredients:

For the meatloaf:

  • 1 1/2 pounds ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/2 cup onion, finely chopped
  • 1/4 cup bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten

For the mashed potatoes:

  • 2 pounds potatoes, peeled and cut into chunks
  • 4 tablespoons unsalted butter
  • 1/2 cup milk or cream
  • Salt and black pepper, to taste

For the gravy:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper, to taste

Preparation:

  1. Preheat your oven to 375°F (190°C). Grease a loaf pan and set aside.
  2. In a large mixing bowl, combine all the meatloaf ingredients. Mix well until all the ingredients are evenly incorporated.
  3. Transfer the mixture to the greased loaf pan and shape it into a loaf shape.
  4. Bake the meatloaf in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
  5. While the meatloaf is baking, prepare the mashed potatoes. Place the potato chunks in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes. Drain well.
  6. In the same pot, melt the butter over low heat. Add the drained potatoes back into the pot and mash them with a potato masher until smooth.
  7. Gradually add the milk or cream to the mashed potatoes, stirring until the desired consistency is reached. Season with salt and black pepper to taste.
  8. For the gravy, melt the butter in a small saucepan over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden.
  9. Gradually whisk in the beef broth and Worcestershire sauce. Bring the mixture to a simmer, stirring constantly until the gravy thickens. Season with salt and black pepper to taste.
  10. Once the meatloaf is cooked, remove it from the oven and let it rest for a few minutes before slicing.
  11. Serve slices of meatloaf alongside a generous portion of mashed potatoes. Drizzle the gravy over the meatloaf and mashed potatoes.
