Breakfast burrito
Enjoy the hearty and flavorful breakfast burritos filled with scrambled eggs, bacon, cheese, and fresh vegetables. They are perfect for a quick and satisfying breakfast or brunch, and you can customize them by adding your favorite ingredients such as avocado, sausage, or black beans.
Ingredients:
- 4 large flour tortillas
- 8 large eggs
- 1/4 cup milk
- Salt and pepper to taste
- 4 slices of cooked bacon, crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro (optional)
- Hot sauce or salsa for serving
Preparation:
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Heat a large non-stick skillet over medium heat. Add the diced bell peppers and onions and sauté until they are softened, about 5 minutes.
- Pour the egg mixture into the skillet with the bell peppers and onions. Stir gently and cook until the eggs are scrambled and cooked through.
- Warm the flour tortillas in a microwave or on a griddle for a few seconds to make them pliable.
- Place a spoonful of the scrambled eggs in the center of each tortilla. Top with crumbled bacon, shredded cheddar cheese, diced tomatoes, and chopped cilantro (if desired).
- Fold the sides of the tortilla over the filling, then roll it up tightly to form a burrito shape.
- Repeat the process with the remaining tortillas and filling.
- Heat a large skillet or griddle over medium heat. Place the burritos seam-side down on the skillet and cook for a few minutes on each side until the tortilla is golden brown and crispy.
- Remove the burritos from the skillet and let them cool slightly before serving.
- Serve the breakfast burritos with hot sauce or salsa on the side for added flavor.
