Ingredients:

12 oz (340g) pasta of your choice

2 tablespoons olive oil

1 small onion, finely chopped

4 cloves garlic, minced

10 oz (280g) mushrooms, sliced

3 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)


Method:

1️. Cook the Pasta:

Cook the pasta according to package instructions until al dente. Drain and set aside.

2. Sauté the Vegetables:

In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.

3️. Cook the Mushrooms:

Add sliced mushrooms to the skillet and cook for 5-7 minutes until they release their juices and turn golden brown.

4️. Add the Spinach:

Stir in chopped spinach and cook until wilted, about 2-3 minutes.

5️. Make the Cream Sauce:

Pour in heavy cream, bringing it to a gentle simmer. Stir in grated Parmesan cheese until melted and the sauce thickens. Season with salt and pepper to taste.

6️. Combine and Serve:

Add cooked pasta to the skillet, tossing to coat evenly with the creamy sauce. Serve immediately, garnished with freshly chopped parsley.
