Hearty Romanian Pea & Potato Stew (Mâncare de Mazăre)
Ingredients:400g tomato puree (14 oz)
450g green peas (fresh or frozen)
6 small potatoes, diced
2 tbsp sunflower oil
1 yellow onion, diced
4 celery stalks, sliced
2 carrots, sliced into medallions
3 dried bay leaves
1 cup fresh dill, chopped
2 tsp cimbru (or thyme)
1 tsp paprika
1 tsp salt (adjust to taste)
0.5 tsp white pepper (or black pepper)
Directions:
In a large pot, heat the sunflower oil over medium heat. Sauté the diced onion until golden.
Add the sliced carrots and celery, stirring for about 3 minutes.
Pour in 400ml (1.5 cups) of water and add the diced potatoes. Cover and let simmer for 8 minutes.
Stir in the tomato puree, green peas, bay leaves, paprika, cimbru, salt, and pepper. Let cook for 30 minutes.
Remove from heat and mix in the fresh dill. Adjust seasoning to taste.
Serve warm with fresh bread for a comforting meal.
