1 cup (240ml) water

1 cup (240ml) heavy cream
1 cup (120g) shredded cheddar cheese
1 cup (120g) shredded Monterey Jack cheese (or your favorite melting cheese)
1 can (10 oz/283g) diced tomatoes with green chilies, drained (like Rotel)
Salt and pepper, to taste
For Garnish (Optional):
Fresh cilantro, chopped
Sliced jalapeños
Crushed tortilla chips
Instructions
1. Cook the Pasta:
Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
Drain and set aside.
2. Prepare the Meat:
