Mac & Cheese Beef Burrito
Ingredients:
1 lb ground beef
2 cups elbow macaroni
1 1/2 cups shredded cheddar cheese
1 cup milk
2 tablespoons butter
1 tablespoon flour
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
4 large flour tortillas
4 slices cooked bacon
Fresh parsley for garnish
Salt and pepper to taste
Instructions:
Cook the Macaroni: In a pot of salted water, cook the elbow macaroni according to package instructions. Drain and set aside.
Cook the Beef: In a skillet, cook the ground beef over medium heat, breaking it up as it cooks. Season with salt, pepper, garlic powder, and smoked paprika. Cook until browned and fully cooked. Drain excess fat.
Make the Cheese Sauce: In a separate pan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually add the milk, whisking constantly to prevent lumps. Cook until the mixture thickens. Stir in the shredded cheddar cheese and season with salt and pepper. Mix until the cheese is fully melted and smooth.
Combine: Toss the cooked macaroni in the cheese sauce until fully coated. Add the cooked beef and mix until everything is evenly combined.
Assemble the Burrito: Lay out the tortillas on a flat surface. Add a generous portion of the mac & cheese beef mixture in the center. Top with crispy bacon and a sprinkle of fresh parsley.
Roll & Serve: Fold in the sides of the tortilla and roll it up tightly. Slice it in half, serve, and enjoy your cheesy, savory burrito!
