Dutch babies, also known as German pancakes, are delicious puffy pancakes that are baked in the oven. They are light, airy, and perfect for a special breakfast or brunch. Here’s a recipe to make Dutch babies:
Ingredients:
- 3 large eggs
- 3/4 cup milk
- 3/4 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 2 tablespoons unsalted butter
- Powdered sugar, for dusting
- Fresh berries or maple syrup, for serving (optional)
Preparation:
- Preheat your oven to 425°F (220°C). Place a 10-12 inch cast-iron skillet or oven-safe baking dish in the oven while it preheats.
- In a blender or mixing bowl, combine the eggs, milk, flour, granulated sugar, vanilla extract, and salt. Blend or whisk until the batter is smooth and well combined.
- Carefully remove the hot skillet or baking dish from the oven and add the butter. Swirl the pan or dish to melt the butter and coat the bottom and sides evenly.
- Pour the batter into the hot skillet or baking dish. Place it back into the oven.
- Bake for about 20-25 minutes, or until the Dutch baby is puffed up and golden brown around the edges.
- Remove from the oven and let it cool for a minute. The pancake will deflate slightly as it cools.
- Dust the Dutch baby with powdered sugar and serve immediately.
