Shrimp Broccoli Alfredo
Ingredients:
12 oz fettuccine pasta
1 lb large shrimp, peeled and deveined
2 cups broccoli florets
3 tbsp unsalted butter
4 cloves garlic, minced
1 ½ cups heavy cream
1 cup grated Parmesan cheese
½ tsp Italian seasoning
Salt and pepper to taste
Fresh parsley, for garnish
Instructions:
Cook the Pasta and Broccoli:
Bring a large pot of salted water to a boil and cook the fettuccine according to
package instructions.
Add the broccoli florets to the boiling water during the last 3 minutes of cooking.
Drain and set aside.
Cook the Shrimp:
In a large skillet over medium heat, melt 1 tablespoon of butter. Add the shrimp,
season with salt, pepper, and Italian seasoning, and cook for 2-3 minutes on
each side until pink and opaque. Remove from the skillet and set aside.
Make the Alfredo Sauce:
In the same skillet, melt the remaining butter and add the minced garlic. Sauté
for about 1 minute until fragrant.
Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese,
whisking constantly until the sauce is smooth and thickened. Season with salt
and pepper.
Combine and Serve:
Add the cooked pasta, broccoli, and shrimp back into the skillet with the Alfredo
sauce. Toss everything together until well coated.
Serve immediately, garnished with fresh parsley and extra Parmesan if desired.
