Este lomo de cerdo con piña en olla de cocción lenta es un sueño dulce y sabroso hecho realidad.
Ingredientes:
Lomo de cerdo: 2-3 libras, sin exceso de grasa
Aceite vegetal: 2 cucharadas
Sal y pimienta: al gusto
Ajo: 8 dientes, picados
Salsa de soja: 1/4 taza
Azúcar morena: 1/2 taza
Trozos de piña con jugo: 1 lata (23,5 onzas)
Instrucciones:
Prepara el cerdo: comienza por quitar el exceso de grasa del lomo de cerdo y
sazona generosamente con sal y pimienta.
Dora el cerdo: calienta el aceite vegetal en una sartén grande a fuego medio-alto.
Una vez caliente, dora el lomo de cerdo por todos lados hasta que se dore,
aproximadamente de 2 a 4 minutos por lado.
Cocina el cerdo a fuego lento: transfiere el lomo de cerdo dorado a tu olla de
cocción lenta. Espolvoree el ajo picado sobre la carne de cerdo, luego vierta la
salsa de soja y agregue los trozos de piña, incluido el jugo. Espolvoree el azúcar
morena de manera uniforme por encima.
Cocción: cubra la olla de cocción lenta y déjela hervir a fuego lento durante 4 a 6
horas si prefiere un solomillo de cerdo que pueda cortar en rodajas. Para obtener
una textura más tierna y desmenuzada, cocine a fuego lento durante 8 a 10 horas,
vertiendo ocasionalmente los jugos de cocción sobre la carne de cerdo. Después
de desmenuzar la carne de cerdo, regrésela a la olla de cocción lenta y déjela
hervir a fuego lento durante otra hora para que absorba más sabor.
