Bacon-Wrapped Pesto Chicken Rolls
Ingredients:
4 boneless, skinless chicken breasts
1/2 cup pesto sauce
8 slices bacon
Salt and pepper to taste
1 cup shredded mozzarella cheese
Fresh basil (for garnish)
Instructions:
Preheat oven to 375°F (190°C).
Season chicken breasts with salt and pepper; spread pesto sauce evenly on each
breast.
Place shredded mozzarella cheese on top of the pesto, then roll up each chicken
breast tightly.
Wrap each roll with 2 slices of bacon, securing with toothpicks if necessary.
Place the rolls seam-side down in a baking dish; bake for 25-30 minutes until
chicken is cooked through and bacon is crispy.
Remove toothpicks before serving and garnish with fresh basil.
Notes:
Serve with a side of roasted vegetables for a balanced meal.
